
Slow cooker salsa chicken is an easy taco chicken recipe! It's simple with only three ingredients, but packs great flavor. It freezes great, so you can make it in advance and reheat for an easy weeknight dinner. I usually keep some of this on hand in the freezer in case I don’t feel like cooking.

Salsa chicken is a versatile recipe that Salsa chicken can be used for tacos, enchiladas, taco salads, burrito bowls, and more. I sometimes even put some in my breakfast taquitos. Recipe Notes
If you don’t have a jar of salsa, you can use a can of Ro-Tel or even just petite diced tomatoes with some dried minced onion and garlic powder.
You can use store-bought packets of taco seasoning, but I use homemade taco seasoning especially with how often I have taco night.
The chicken comes out juicy, but don’t worry if yours ends up a bit dry. That's happened to me a few times by accident, usually when I'm cutting the recipe in half. Mixing everything back together in the slow cooker will usually take care of any dryness. If you are cutting the recipe in half and only using two chicken breasts, I recommend checking the chicken bout halfway through the cooking times stated in the recipe.
The chicken reheats well in the microwave or the oven. Cover if reheating in the oven to prevent the chicken from getting too dry. If it gets too dry during the reheating process, just add a little more salsa to help it along.

Slow Cooker Salsa Chicken
Equipment
Ingredients
- 4 boneless skinless chicken breasts
- 1 jar salsa 16 ounce jar recommended
- 2 packets taco seasoning or 4 tablespoon homemade taco seasoning
Instructions
- Place chicken breasts in slow cooker. Top with taco seasoning first, then salsa.
- Cook on low for 6 hours or high for 3 hours until chicken is cooked through and shreds easily with a fork.
- Remove chicken from slow cooker. Shred with a fork.
- Return chicken to slow cooker and stir to combine.
- Keep warm until serving, or transfer to refrigerator or freezer if making in advance.
