Slow cooker salsa chicken is an easy taco chicken recipe! It's simple with only three ingredients, but packs great flavor. It freezes great, so you can make it in advance and reheat for an easy weeknight dinner. I usually keep some of this on hand in the freezer in case I don’t feel like cooking.
Salsa chicken is a versatile recipe that Salsa chicken can be used for tacos, enchiladas, taco salads, burrito bowls, and more. I sometimes even put some in my breakfast taquitos. This is also good by itself with a few sides, like rice and Chipotle Mexican Street Corn (recipe by A Sassy Spoon). Taco night isn't complete without margaritas, like Strawberry Jalapeno Margaritas (recipe by Life's Ambrosia) or Coconut Margaritas (recipe by Peel With Zeal). For a non-alcoholic option, this Strawberry Mojito Mocktail (recipe by The Schmidty Wife) is a good choice.
If you don’t have a jar of salsa, you can use a can of Ro-Tel or even just petite diced tomatoes with some dried minced onion and garlic powder.
You can use store-bought packets of taco seasoning, but I use homemade taco seasoning especially with how often I have taco night.
The chicken comes out juicy, but don’t worry if yours ends up a bit dry. That's happened to me a few times by accident, usually when I'm cutting the recipe in half. Mixing everything back together in the slow cooker will usually take care of any dryness. If you are cutting the recipe in half and only using two chicken breasts, I recommend checking the chicken bout halfway through the cooking times stated in the recipe.
The chicken reheats well in the microwave or the oven. Cover if reheating in the oven to prevent the chicken from getting too dry. If it gets too dry during the reheating process, just add a little more salsa to help it along.
