
Dips are one of my favorite things to snack on, and I typically will make several when I host a party. I tossed this dip together quickly one day when I was going to make my grandmother's cucumber tea sandwiches but ran out of time. While the sandwiches are a quick recipe, this one is even faster. The dip didn't last long at the party!
This is great with all kinds of crackers. I usually use pita crackers and wheat thins, but you can't go wrong with pretty much any kind of cracker. If you want to make your own pita chips, Housewife How-Tos has a recipe for Homemade Pita Chips. The pita chips can even be frozen for later!

Cucumber Dip
Ingredients
- ½ cup sour cream
- 1 cucumber peeled and seeds removed
- 2 tablespoon minced onion fresh, or 2 teaspoon dried minced onion
- 2 teaspoon dried parsley
- 2 teaspoon white vinegar
- 1 teaspoon dried dill weed
- 1 dash paprika
Instructions
- Peel cucumber, remove seeds, and dice small. Sprinkle with salt and let stand for 10 minutes.
- Combine the rest of the ingredients.
- Press excess liquid out of the cucumbers using a paper towel. Stir the cucumbers into the sour cream mixture.
