
I was purging my freezer, and I had some leftover pulled pork to use. I think it was from the smoked pork butt I made on the charcoal grill I made. My go-to for using random freezer meats is usually chili, so I was thinking about a pulled pork soup. I thought about doing a white chili or some kind of chili verde (similar to the pulled pork burrito bowls I sometimes make but in a chili format). I also thought about some kind of casserole or pot pie, but I settled on tortilla soup.
Pulled Pork Tortilla Soup Recipe Notes
This recipe is designed to be used with leftover pulled pork BBQ, but you can also use store-bought pulled pork. It calls for 2 cups, but it's totally fine to use a little more or a little less than that. I don't recommend making adjustments to the proportions of everything else unless you're using less than 1.5 cups or more than 2.5 cups.
You can make this recipe in the slow cooker or on the stove top in a dutch oven or large pot. There really isn't any difference between the two methods other than personal preference.
It's easy to customize the toppings on the soup to your liking. I'm not a huge fresh cilantro fan, but that would be a great topping choice for those who are. Avocado would be another good choice as a topping. If you don't like beans, you can also easily omit the beans from the soup.
The pulled pork soup gets the chipotle chili flavor I love from chipotle chili powder. If you don't have any chipotle chili powder and don't want to buy any just for this recipe, you can also use a packet of McCormick Chipotle Taco Seasoning. A half teaspoon or so of liquid from a can of chipotles in adobo sauce is also a good substitute. I keep those on-hand in my freezer (after the can has been opened) since I rarely use an entire can at once. These days I actually make my own taco seasoning and just add the chipotle chili powder for this soup.

Pulled Pork Tortilla Soup
Equipment
- Slow cooker, dutch oven, or large pot
Ingredients
- 2 cups pulled pork It's fine if you are using leftovers and it has some BBQ sauce on it. It's also fine to use a little more or less than 2 cups.
- 2 tablespoon BBQ sauce If your pulled pork does not have BBQ sauce on it
- 1 can petite diced tomatoes 28 oz. can
- 1 jar salsa verde 16 oz. jar
- 1 onion diced
- 1 cup frozen corn OK to substitute 1 can of corn, drained
- 1 can black beans drained
- 1 can great northern beans drained
- 1 tablespoon garlic powder
- 1 tablespoon cumin
- 1 tablespoon paprika
- ½ teaspoon chipotle chili powder Instead of all of the seasonings, can substitute a packet of McCormick Chipotle Taco Seasoning
- 1 cup chicken or vegetable stock
Toppings (As Desired)
- sour cream
- shredded Monterey Jack or cheddar cheese
- tortilla strips Or crumble some tortilla chips
- sliced jalapenos
Instructions
- Combine all ingredients (except toppings) in the slow cooker or a large pot.
- If using the slow cooker, cook on low for about 90 minutes, or until the soup is hot. If cooking on the stove top, bring the soup to a boil, then reduce to a simmer and cook covered for about 90 minutes or until the soup is hot. Stir occasionally.
- Top each portion with desired toppings.

Can I use chicken thighs ?
