Instructions
Melt butter in a dutch oven over medium-high heat.

Add onions. Saute, stirring occasionally, until onions are translucent and some begin to turn golden.

Add flour and stir into the butter. Cook, stirring frequently, to make a roux, for about 5 minutes.

Stir in garlic powder, paprika, parsley, salt, and pepper.

Add Dijon and stir to combine.

Add stock and whisk until dijon is dissolved and there are no roux clumps.
2½ cups chicken or vegetable stock
Add broccoli and carrots.
1½ cups grated carrots,
3 cups broccoli florets
Bring to a boil, then reduce to a simmer. Cover and cook for 20 minutes, stirring occasionally, until broccoli is tender.
Stir in shredded cheese until melted.
2 cups shredded cheddar cheese,
1 cups finely grated gruyère cheese
Warm the heavy cream and stir in to the soup.

Let the soup heat for an additional 5 to 10 minutes before serving.
