This hearty soup features cheese tortellini in a creamy garlic and herb tomato broth. It's a one-pot meal that comes together in just 30 minutes. Serve as a soup course or a full meal!
Heat a dutch oven or large pot on the stove over medium-high heat.
Add enough olive oil to coat the bottom (1 to 2 tablespoons).

Saute the onions, stirring frequently, until they are very soft and have browned on the edges.

If using the optional vodka or white wine, add to the pot and use a wooden spoon to scrape up any browned bits from the bottom. Otherwise, skip to step 5.

Add vegetable stock to the pot. If step 4 was skipped, use a wooden spoon to scrape up any browned bits from the bottom of the pot.
3 cups vegetable stock
Add the crushed tomatoes, salt, pepper, garlic powder, and Italian seasoning.
1 can crushed tomatoes, 1 tsp kosher salt, ¼ tsp black pepper, 1½ tsp Italian seasoning, ½ tsp garlic powder
Bring to a boil. Reduce to low and cover. Simmer for 15 minutes, stirring occasionally.
Remove cover and bring the soup back to a boil. Add tortellini and cook for 3 minutes on medium (or per package instructions if different).
1 package refrigerated cheese tortellini
Reduce to low. Stir in heavy cream.
