These chocolate cookies are so rich and indulgent, but the best part is how easy they are to make with the chocolate pudding mix. One of my coworkers came back a few minutes after having one of these cookies and said, "Wow, that chocolate really stays with you!" It definitely does! These are so rich, but they are also not overly sweet because of the dark chocolate chips.
I randomly tossed these together the first time I made them, and I was surprised they actually turned out so well without needing to adjust the recipe a bunch of times! Usually I have to make new recipes several times with adjustments before getting them 100% right. I didn't have any cocoa powder on hand, but I really, really wanted to make chocolate cookies. I did have pudding mix, so I figured I could make that work. My typical recipe for cookies is fairly formulaic. It's basically the same base with different mix-ins. I thought that would work fairly well as a starting point, but knew I needed to make some adjustments because of the pudding. Compared to my recipe for Classic Chocolate Chip Cookies, the Triple Chocolate Cookie recipe uses less vanilla, granulated sugar instead of brown sugar (and a little less of it), and 2x the chocolate chips.
The cookie dough for these will be thicker than a regular cookie dough, in part because of the pudding mix. This makes for a pretty thick cookie, too, because the cookies don't spread much when they bake. The best part? No need to refrigerate the dough!
Chocolate Cookie Recipe Tips
When adding the egg, crack the egg into a glass or separate small bowl in case you get shell fragments. It's much easier to get them out from there than the cookie dough!
It's harder to tell when chocolate cookies are done than it is with a traditional chocolate chip cookie, sugar cookie, etc. Chocolate chip or sugar cookies are pretty easy because they're obviously done when they're golden brown. So how do you know these are done? Look to see if the edges are set. The centers should be puffy, but not jiggly.
