Types of Beef and Preparing the Beef
This recipe uses a sirloin roast, but you could also use individual sirloin steaks. Per pound, the sirloin roast was cheaper. You'll want a roast between 2.75 and 3 pounds to serve 4 people. I've also made beef tips in the oven with tenderloin. I haven't made this with tri-tip yet, but I think that would also be a good choice. Avoid any cuts that need to be cooked low and slow. This recipe is designed for quick oven roasting, so cuts of beef that cook well at high temperatures work well.
Remove the silver skin (membrane) from the beef before cutting it into cubes of similar size (1 inch recommended). Removing the membrane is important because it won't break down during cooking, so the steak tips are likely to be tough if this step is skipped. See this tutorial by Meat Eater for removing the silver skin (membrane) from the beef. Cutting the beef into uniform sizes is important to promote even cooking. A mix of big and small pieces can cause some to be overcooked and some to be undercooked.
BBQ Dry Rub and Salt
I make my own BBQ Dry Rub. It's salt-free, so I add some salt to taste when serving these beef tips. I like to use a salt-free rub because it gives me better control over the amount of salt in a recipe. This can be important when a recipe calls for other ingredients with a lot of salt, such as soy sauce. You can also use any BBQ dry rub of your choice, whether homemade or store-bought. For store-bought options, consider Kosmos Q (I like it for reasons other than it having a name similar to my horse, Cosmo), Meat Church, or Kinder's.
Don't have BBQ dry rub? Use a 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 teaspoon smoked paprika. Another good combination would be 1 teaspoon garlic powder, 1 teaspoon onion powder, a half teaspoon cumin, and a half teaspoon paprika.
Storing and Reheating
Store the BBQ beef tips with the remaining juices from the pan to help retain moisture. Store in a container in the fridge, up to a few days.
Reheat in a skillet on the stove or in a baking dish in the oven along with the pan juices they were stored with. Toss with a small amount BBQ sauce before serving.
Microwaving these for reheating is not recommended because it makes them dry out.


Oven Roasted BBQ Beef Tips
Ingredients
- 1 sirloin tip roast (2.75 to 3 pounds)
- 1 tablespoon olive oil (or avocado oil)
- 3 teaspoon BBQ dry rub (store-bought or homemade)
- BBQ sauce
Instructions
- Preheat the oven to 400℉.
- Prepare the beef by trimming excess fat and removing the silver skin (membrane). See notes.1 sirloin tip roast
- Cut the beef into cubes of similar size, about 1 inch.
- Transfer the been cubes to a large mixing bowl with 1 tablespoon oil. Stir to coat all cubes with the oil.1 tablespoon olive oil
- Add BBQ dry rub and mix until all cubes are evenly coated with the dry rub.3 teaspoon BBQ dry rub
- Distribute cubes in a single layer on a large rimmed baking sheet.
- Transfer to the oven and roast for 15 minutes. Remove from the oven and check the temperature. (If you don't have a meat thermometer, you can cut a cube in half and look.) See notes temperatures. Continue cooking, if applicable, until beef tips reach the desired temperature.
- Once the beef reaches the desired temperature, drizzle with BBQ sauce and allow to rest outside of the oven for 5 to 10 minutes before serving.BBQ sauce
- Salt to taste when serving. Serve with additional BBQ sauce on the side, if desired.
