Weeknight cooking is always a struggle for me. I work full time and have multiple horses to ride, and I'm often eating dinner at 8:00 or 9:00 PM. I'm not good at meal planning or making things in advance unless it's something like slow cooker salsa chicken or soup. Sheet pan meals are an easy way to knock out dinner after I'm wiped out from working all day and running straight to the barn to ride. Soy Glazed Salmon with Asparagus
Equipment
- Parchment paper or aluminum foil sprayed with cooking spray
Ingredients
Salmon
- 2 pieces salmon
- 2 tablespoon low sodium soy sauce
- 2 tablespoon brown sugar
- ½ teaspoon garlic powder
- ⅛ teaspoon ground ginger
- ⅛ teaspoon sriracha (Can substitute red pepper flakes. Use more Sriracha if you want it a little spicier.)
Asparagus
- 1 bunch asparagus
- 2 tablespoon olive oil
- 2 teaspoon lemon pepper seasoning
Instructions
- Preheat oven to 400℉.
- Line a rimmed sheet with parchment paper, aluminum foil, or a silicone baking mat. If using aluminum foil, coat with nonstick spray.
- Trim asparagus and toss with olive oil and lemon pepper seasoning. Transfer to the baking sheet, leaving room for the fish.
- Combine soy sauce, brown sugar, garlic powder, ginger, and sriracha. Coat the fish on all sides.
- Place the fish on the baking sheet. Pour the remaining soy sauce mixture over the fish.
- Bake for about 15 minutes, or until the fish is cooked through.
